Elle est n\u00e9e de la volont\u00e9 de structurer et valoriser les comp\u00e9tences du d\u00e9partement Agroalimentaire &amp; Nutrition portant sur&nbsp;l\u2019am\u00e9lioration de la durabilit\u00e9 des matrices agricoles et agroalimentaires &amp; caract\u00e9risation de leur qualit\u00e9 par des techniques innovantes.<\/p>\n<\/div>\n\n\n\n<div class=\"wp-block-column is-layout-flow OCCI\u2019FOOD articule ses travaux autour d\u2019un enjeu central :&nbsp;<br><strong>Comprendre, caract\u00e9riser et am\u00e9liorer les matrices agricoles et agroalimentaires pour proposer des aliments plus sains, durables, s\u00fbrs et sensoriellement valorisants.&nbsp;<\/strong><\/p>\n\n\n\n<p>Deux axes principaux structurent la recherche :&nbsp;<\/p>\n\n\n\n<p><strong>Axe 1 \u2013 Durabilit\u00e9 des matrices agricoles et agroalimentaires<\/strong><br>R\u00e9duction des intrants conventionnels, valorisation des coproduits, lutte contre le gaspillage par des proc\u00e9d\u00e9s comme l\u2019ozonation ou la fermentation.<\/p>\n\n\n\n<p><strong>Axe 2 \u2013 Caract\u00e9risation de la qualit\u00e9 par des techniques innovantes<\/strong><br>\u00c9tudes physico-chimiques, sensorielles et microbiologiques pour comprendre et optimiser les propri\u00e9t\u00e9s fonctionnelles des matrices agricoles et agroalimentaires<\/p>\n<\/div>\n\n\n\n<div class=\"wp-block-column formation<\/h2>\n\n\n\n<p>L\u2019unit\u00e9 accueille et encadre une dizaine de <strong>doctorants<\/strong>, menant des travaux sur :&nbsp;<\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>Les effets de l\u2019ozone ou de l\u2019eau ozon\u00e9e pour la protection des cultures (Vigne, pommier, fraisier\u2026), la conservation et le traitement post r\u00e9colte des fruits et l\u00e9gumes (pomme, fruits rouges\u2026)&nbsp;<\/li>\n<\/ul>\n\n\n\n<ul class=\"wp-block-list\">\n<li>L\u2019impact de prot\u00e9ines et structure macromol\u00e9culaire sur le go\u00fbt des vins blancs du Sud-Ouest&nbsp;<\/li>\n<\/ul>\n\n\n\n<ul class=\"wp-block-list\">\n<li>La qualit\u00e9 des laits crus et des produits ferment\u00e9s artisanaux.&nbsp;<\/li>\n<\/ul>\n\n\n\n<ul class=\"wp-block-list\">\n<li>La pr\u00e9diction de la qualit\u00e9 de matrices agricoles et agroalimentaires&nbsp;<\/li>\n<\/ul>\n\n\n\n<p>Les enseignants-chercheurs d\u2019OCCI\u2019FOOD sont membres de l\u2019<strong>\u00c9cole Doctorale SEVAB<\/strong>, dans l\u2019axe &#8220;Ing\u00e9nieries microbienne et enzymatique&#8221;.&nbsp;<\/p>\n<\/div>\n\n\n\n<div class=\"wp-block-column
